Veg kolhapuri - Indian style recipe
Today we are going to make a very known Indian recipe made with cauliflower, potatoes, carrots, beans and a variety of veggies...yes, I'm talking about Veg Kolhapuri curry. The best part of this recipe is its delightful taste which is natural and comes by adding variety of veggies . So, if you have never tasted it before, try it now! Ingredients:
1) Potatoes: 2 medium sized
2) Cauliflower: 1 cup
3) French beans: 1 cup
4) Carrot: 1 cup
5) Capsicum: 1/2 cup
6) Onion: 1 medium sized
7) Tomato: 1 medium sized
8) Oil: 5-6 tsp (to deep fry veggies)
9) 1 Bay leaf, 1 Cardamom, 2-3 Cloves, 5-6 Black pepper, 1 Cinnamon stick, Cumin seeds.
10) Kashmiri Chilli: 4-5
11) Garlic: 3-4
12) Garam Masala powder: 1tsp
13) Coriander Powder: 1tsp
14) Cumin Powder: 1/2 tsp
15) Turmeric powder: 1/4 tsp
16) Red Chilli powder: 1tsp
17) Salt: as per your taste.
18) Green Coriander for garnishing.
(You can add some other veggies or omit some of this as per your like)
Recipe:
1) Boil 1 glaas of water and put the Kashmiri chilli in that water, leave it for 15-20 minutes. After it is soaked blend it with garlic and 2-3tsp of water. Keep this chilli/garlic sauce aside.
2) Heat the Pan, put some oil and half fry all the veggies(till it turns golden) on a high flame, keep it aside.
3) Take another pan and saute the chopped onion for 3-4 minute on medium flame ( you can use the same pan and oil just make sure you are sauteing onion in only 1tsp oil). After sauteing onion add the chopped tomato and saute it for another 2 minutes by adding a pinch of salt. Let it set cool and then blend it into a smooth texture (you can add 1-2 tsp water)
4) After all this preparation, heat the pan add 2tsp oil(you can use the same oil)once the oil is heated low the flame, add all the raw spices: Bay leaf, Cardamom, Cloves, Black pepper, Cinnamon stick altogether for 6-7 seconds, after that add cumin seeds and stir it until it turn golden, add the chilli and garlic paste and saute it until it gets separated with oil, then add the Garam Masala powder, Coriander Powder, Cumin Powder, Turmeric powder and red chilli powder altogether and saute it for 30 seconds. After sauteing the masala's add the blended onion and tomato paste and saute it on medium flame untill it gets separated with oil. Now, add all the veggies and salt (as per taste)mix it.
5) Add some water(approx: 1/2 glass) and adjust the consistency. Cook it for 3-4 minutes (do not over cook as we have already fried veggies and spices). Off the flame.
6) Garnish it with Coriander. You can also put some butter on your VEG KOLHAPURI.
You can have it with normal rice and normal chapati.
