Aloo paratha recipe
Aloo parathas are one of the popular delicacies of Punjab and are eaten with great fervor by people of every region in India, usually it is flatbread made of wheat flour which uses potatoes and green spices, it can be eaten with butter, curd or pickles.
Ingredients:
1) Potatoes: 4 medium sized
2) Green Coriander leaves: 1 cup
3) Green chillies: 2-3
4) Garlic: 3-4 cloves
5) Wheat flour: 2 cups
6) Ghee/oil: 2-3 tsp
7) Salt: as per taste
8) Butter: 3-4 tsp
Recipe:
First of all, add the potatoes and water(1 glass) in a cooker and let it boil for three whistles. After it has boiled, take the potatoes out into a bowl and add cool water, after cooling, remove the peels from the potatoes and mash it. Keep it aside.
Let's prepare the green spices, take the green coriander, green chilli, garlic, salt and grind them into a green paste. As soon as the spices are ready, mix it well with the mashed potatoes and keep it aside too. Stuffing ready!
Now, take the wheat flour, add 1 tsp of oil and little bit of water and keep kneading it by adding water until it turns into a soft dough. (Remember, the secret of making soft and good parathas lies in the kneading of the dough.)
Once you are done with kneading divide the dough into 4 or 6 equal balls. Take 1 dough ball, roll it with your rolling pin. Add 2-3 tsp of stuffing in the centre(do not overfill) and bring all the edges together and pinch to seal. Now, again roll the dough to a circle with your rolling pin into 6-7 inches diameter.
Heat a pan, place the paratha on it and cook it for 1 minute then flip over the paratha and apply ghee on the cooked side, again after 1 minute flip over the paratha and apply ghee to another side and cook for 1 minute or until the sides have golden brown spots. Repeat with remaining dough.
Here, our Aloo paratha is ready to serve!
Serve it hot with butter, curd or pickles.
